A Quiet Goodbye, and the Memories That Stay
Hi, I'm Akito, and I'm glad you found your way here. My family's craft began in Sakai, where my grandfather spent forty years sharpening the same three knives, and I never understood why he never seemed to need a fourth. I grew up far from that workshop, here in the States, but I never grew up far from the stories. When I finally stood in a Japanese workshop as a teenager, the work pulled me in and never let go. It taught me what my grandfather always knew: a blade isn't finished when it's sharp, it's finished when it disappears in your hand. What started as a question became the work I gave my heart to, and a piece of that heart is in every blade I share with you. Now I am letting it all go, and I hope one of these knives stays in your kitchen for a long time.

About Akito
I didn't grow up in a forge. I grew up watching my grandfather sharpen the same three knives for forty years, and wondering why he never seemed to need a fourth. That question eventually took me to Sakai, Japan, where blacksmiths have shaped steel for over six hundred years. I spent three years there learning one simple thing: a blade isn't finished when it's sharp, it's finished when it disappears in your hand. That's what I set out to build with Akito.
Every Akito knife is still hand-finished in small batches, tested by hand before it ever ships. I'm not chasing scale, I'm chasing the feeling of that first cut. This is the founding collection, made the way I was taught it should be made — and I'd genuinely love for it to be in your kitchen.
After years at the forge, I've made the difficult decision to close this chapter. What remains is the last of the founding collection — the final batches, made the way I was taught, before the forge goes quiet for good. This isn't an easy goodbye, but I'm grateful to everyone who let one of these knives find a place in their kitchen. I hope yours stays with you for a long time.
A Bittersweet Farewell
As I step into the next chapter of my life, I have made the hard decision to close Akito. This was never only a shop to me. It has meant early mornings, good steel, and customers who let my knives find a place in their kitchens.
I hope you will look through the final collection, now up to 50% off, each blade chosen with the same care that has guided me from the start. This goodbye is not an easy one, but I am grateful beyond words for everyone who has been part of the story. When these are gone, they are gone.
